In the bottom of a baking dish sprinkle:
basil
mint
black pepper
Then layer:
eggplant
onion mix
cheese
herbs
Before applying the last layer of eggplant pour on a can of tomato sauce and a bread crumbs.
then add the last layer of eggplant and cheese. Top with generous amount of parmesan cheese.
Bake at 350f for 30min.

kitchen perils : muffin soup
The other day my dad was looking for something to make soup with. We thought we'd found some pureed pinto beans in the fridge that would make a good stock. So he put together something resembling a tortilla soup. As we ate it we thought this doesn't taste right. It was about three days latter when I realized we'd used the left over bran muffin mix mom left in the fridge for easy muffin making. After realizing it was muffin mix and not beans gone weird the soup didn't seen so bad. Would I make said soup on purpose? Maybe.

pancake casserole
This is one of those back-of-the-fridge things. I warned you.
pancakes 6-ish
salmon patties 4-6
yam = 1/2cup
chili (a small to medium pepper)
some onion fried
1 egg
1/2 cup-ish milk
Layer pancakes, salmon, pancakes. beat egg and milk together. Arrange the other ingredients on top. Dump in milk-egg mix. Bake at 300ish for at least 30min.
Eat warm.

Can't Miss Cornbread
This cornbread recipe is actually a Banks family one. I switch out the lard in favor of shortening or cooking oil. If you don't have butter milk use regular milk with a Tsp. of vinegar.
1 1/2 c. corn meal
2 t. backing powder
1 t. salt
1/2 t. backing soda
1 Tsp.(not melted) lard
1 (whole) egg
1 1/2 cups butter milk (or until thin)
Put in pan and bake in the oven
350 F., 35-45 minutes (or till it looks right)

Grampa Glen's Garlic salad dressing
This is written exactly as it appears on the index card clamped to the recipe rock at my moms house.
Make a thin white sauce, using one cup of water and about 1 1/2 tablespoons cornstarch (or arrowroot flour, or potato starch). while this is cooling, peel 1/4 cup (more or less) of garlic cloves.
In a blender, place 1/2 cup salad oil (olive?) and the garlic. Blend a few seconds, then add:
cooled white sauce
1/2 cup vinegar
salt and pepper (1 t. salt, 1/2 t. pepper)
1/8 t. cayenne
1/4 t. oregano (optional)
Blend all several second. Whole peppercorns may be used in place of ground pepper.
